Vegan Peanut Butter, Granola, and Chocolate Chip Cookies

Ingredients:

  • 1 cup quinoa flour
  • 1 cup unbleached flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup raw sugar
  • 1/2 cup coconut oil or 1/2 cup vegan butter
  • 1 teaspoon vanilla
  • 1/2 cup soymilk or 1/2 cup rice milk
  • 1/4 cup peanut butter
  • 1/2 cup granola cereal
  • 1 1/2 cups vegan dark chocolate chips

Steps:

  • Preheat oven to 350 degrees Mix batter together until smooth in a mixer or by hand Form 1 to 2 inch balls in your hands and place on a cookie sheet These cookies wont spread out too much so you can place them close together Cook for 10-12 minutes
